One of my favorite parts of Christmas dinner is the sweet potatoes. My cousin Mandy's mother-in-law has this recipe with gooey caramel sauce and marshmallows that make it absolutely delicious. The only problem is that it takes forever to cook the caramel to the right stage. That has become my job for every holiday. This year wasn't too bad, only about 45 minutes.
